Mango Salsa

One of my go-to recipes for quick, easy and healthy is Mango Salsa.  Even in northern Indiana I can find some quality mango in my grocery section in the winter months.

Ingredients:

2 cups diced mango
1 tsp sugar
1 jalapeno pepper, seeded and chopped fine
2 T chopped cilantro
1/3 cup finely chopped red onion
Juice of 1 lime
1/4 tsp salt and a bit of cracked black pepper
1 T olive oil

Directions:

Dice and chop the mango, pepper, red onion and cilantro.  Add to a mixing bowl.  Add the lime juice, sugar, and olive oil.  Season with salt and pepper and toss well.  Cover bowl with plastic wrap and refrigerate for 3 hours before serving (best if refrigerated overnight).



Serve with chips, as a side for chicken or fish, or load up on tacos.  My personal favorite is tacos with shredded chicken, salsa, and diced avocado.

  1. I do the same Wayne, but I just add shrimp (no black pepper) and use Serrano chilies. 🙂
